During my last visit to Delhi, we stayed at Holiday Inn and after exploring the city for the entire day, we were dead tried. So we decided to dine in at the hotel itself. Buffet was not our first choice but after exploring the spread, we just gave in. The spread was really huge, had a lot of variety and they had live counters too.
One of the dish that really caught my attention was the Pineapple Coriander Salad. It had a nice sweet, tangy and spicy taste which was right up my ally. I almost had 3 servings. Now who could let go such a chilled, refreshing and flavourful dish in summers.
Once back in Muscat, I had to recreate it. So presenting my version of delicious Pineapple Coriander Salad – A prefect summer delight
Perp Time: 5 mins Make Time: 5 mins Serves: 2
Pineapple – 1 bowl chopped in chunks
Coriander leaves – 2 tbsp finely chopped
Green chillies – 1 finely diced
Black Salt – according to your taste
Salt – according to your taste
Sugar – optional (depends on the sweetness of the fruit)
Lemon juice – 2 tsp
Lemon Zest – 1 tsp
Rice Wine Vinegar – 1tsp
Black Peper – according yo your taste
Combine all the ingredients in a bowl and toss it well. Keep it chilled until ready to serve.
Instead of green chillies, you can use finely diced red chillies to add some colour to the salad.
Another variation to this salad is, you can combine pineapple with cucumber.
