We all ladies face this huge question in our kitchen on daily basis, that is what to do with leftovers?? Our darling husband’s as well as the kids do not like to see repeat of the same vegetables cooked the previous day for their next day meals. It breaks our heart to see is their unhappy grumpy hungry faces but we cant let food get wasted. Right????
The happiest part of the day is when the entire family sits and dines together. And you cannot let these leftovers spoil this happy scene. I strongly believe we ladies have power to give a yummy twist to our leftover dishes and feed them to our family even without making them realise that they were eating yesterdays cooked vegetables.
Today I bring to you a delicious Sandwich recipe made from sabji cooked the previous night. Leftover Aloo Gobi Sandwich is definitely a crowd pleaser and enjoyed by kids too. A simple dish prepared in less then 10 mins.
Prep Time: 5 mins Cook Time: 4 to 6 mins Serves: 3
Leftover aloo gobi – 1 cup dried
Bread slices – 6 either white or brown bread
Mayonnaise – 1/2 cup
Butter – 2 tbsp
Tomato ketchup – 3 tbsp
Green Chutney – 3 tbsp
Salt – to taste
Pepper – to taste
Sev – for garnishing
Take a bowl and mix the aloo gobi with mayonnaise, salt and pepper. Keep it aside.
Apply butter to one side on the bread and spread the aloo gobi mix on the other side. Place another bread and butter the top part and grill it on medium flame using a sandwich maker like our sandwich wala bhaiya’s do or simply take a pan and toast it on both the side till you get the desired crispness.
Now apply a spoon of green chutney and tomato ketchup on the prepared sandwich and garnish it with sev. Aloo Gobi sandwich is now ready to eat.
You can apply chutney to the bread before spreading the aloo gobi mix and also add grated mozzarella or cheddar cheese to it before grilling the sandwich.
Top the aloo gobi mix with onions to add that crunch factor.
Always toast or grill on medium to low flame.
Use dry aloo gobi sabji otherwise the sandwich will turn soggy.
